Digital ordering may be the new trend in restaurants amid worker shortages

Even with COVID-19 restrictions loosening across the United States, the hospitality industry is still experiencing a worker shortage. The situation has prompted restaurants to turn to technology and offer better compensation to attract applicants. 

In an interview with Yahoo Finance, Laurie Thomas, executive director of the Golden State Restaurant Association, said several restaurants are paying overtime. 

According to Thomas, who owns two restaurants in California’s Bay Area, her managers and chefs are working 12 hours a day for six days a week. “People are just exhausted,” she said.

Data reveals that since COVID-19 began, the restaurant industry has lost 5.9 million jobs in dine-in services. But in May as the economy started to recover from the pandemic, the sector generated thousands of new jobs, nearly two-thirds of which came from food service and drinking.

The labor gap has caused both small and medium-sized businesses to adjust hours and services, and increase the price of their products and services, which also contributes to the soaring inflation. 

“If you don’t have folks in the kitchen to make the food, if you don’t have folks to be able to deliver and serve it, then you’re continuing to suffer financially,” said Thomas. 

But to help address the labor gap, several restaurants are using self-serve kiosks and other automated tools, a trend that began pre-COVID. 

“The kiosks [are a] tremendous help,” said Taco & Co. co-founder Israel Castro in an interview with Yahoo Finance.

Last year, Castro’s eatery based in Berkeley, California turned to a social food ordering platform called Snackpass to increase operations and facilitate online ordering and delivery. Castro said the platform provided so much convenience for the restaurant. 

Shifting to digital self-service set-ups 

The pandemic has also prompted the entire fast-food industry to rapidly shift to digital ordering. Some restaurants utilize QR codes so customers have a “safer” way to order their food. The trend is likely to continue post-pandemic. Some restaurants also use kiosks where customers can view the menu and place orders. These technologies have helped some businesses stay afloat through the labor crisis.

Castro said more customers order off their kiosk than wait in line. 

While Yelp reports that there has been an increase in restaurants using digital ordering set-ups in 2021, Thomas has no plans to make the shift. 

“That’ll help if you’re a concept like McDonald’s,” said Thomas. “It’s not going to help if you’re at a restaurant like mine, where people come in and sit down and servers talk to them.”

As more restaurants shift to self-service technologies as they welcome their customers back, some, like Thomas, still choose to keep their business “part entertainment, part eating experience.”

A cafe in Perm, Russia, recently created a frothy buzz after suggesting they were planning to add a rather controversial ingredient to their lattes: human breast milk.

Yep, we’re not kidding.

Coffee Smile, a local cafe chain in Perm, sparked a national uproar after posters advertising the unusual new addition to their beverages started popping up around their stores.

Soon after, the chain’s owner, Maxim Kobelev, released a promotional video.

In the video, a young mother and breast milk supplier for the café says, “I recently went on maternity leave and saw that a lot of breast milk is required.”

“I have a lot of it. The child eats just a little, so I thought: why not earn extra money? I even made coffee with breast milk for my husband, he liked it.”

Talk about mixing business and motherhood!

Kobelev assured intrigued (and perhaps horrified) customers that the breast milk would be safely sourced, with all mothers tested for health assurance.

In the early stages, only about 40-45 breast milk-infused drinks were planned to be served.

However, they aimed to foam up the production to around 1,000 beverages by year’s end.

A drink would set you back 650 rubles, or about $8.

Once the video went viral, social media blew up like a well-steamed milk frother.

Many wondered if it was a hoax, or if Russia’s food safety authority, the Rospotrebnadzor, was going to get involved.

A local deputy even conducted a poll asking if people were game to try these unique coffee drinks.

The results were frothy: 46% said ‘never,’ while 23% admitted they were ready to give it a try.

Just as things were beginning to boil over, Kobelev revealed the truth behind the entire spectacle.

There would be no breast milk lattes.

It was, in fact, a gimmick; a marketing ploy whipped up when a breastfeeding mother appeared at a company meeting.

“We did not prepare or sell coffee with breast milk,” Kobelev clarified in a press release, likely easing a few jittery nerves.

He added that using breast milk for coffee production was illegal, a handy fact he probably should’ve brewed on earlier.

As it turns out, the scandal was a good brew for business.

Kobelev confessed that people started visiting his cafes asking for the unusual drink.

For those genuinely interested in the brew, Kobelev prepared a drink with a blend of goat and almond milk.

“The taste is very similar,” he stated, a knowledge he acquired as a father of two children.

While no actual laws were broken, this quirky news story has undoubtedly left a strong aftertaste in the public’s mouth.

At least for now, Coffee Smile has decided to stick with the usual milk options.
